I am planning on making this for my family of six for dinner tonight. They are not huge brown chicken fans, but they LOVE chicken baked in a casserole dish (which this is). I added 2 Tbsp red wine vinegar to the water like you did and also, added cumin and three or four raisins because my family likes fruit in their stew. We loved it.
