Made this tonight. Followed the recipe to a T with the exception of 2 more pounds of chicken. When checking the crock pot the ingredients had a lot of liquid so I had no worries it would be dry. However once I shredded the chicken and added the cheese and bacon it went quite thick and was more of a dip than say a meal. We put it on top of macaroni noodles however it was just too thick and rich. One box of cream cheese would be good enough I think. This recipe would be good as a hot dip for crackers or veggies but not as a meal option.
My daughter made this and it was amazing . She is thinking of adding cream of chicken. I told her possibly chicken broth or heavy whipping cream to make more of a sauce or creamier. She said taste was amazing! Have you added any of these.
Simple ingredients and simple methods are what this recipe is all about. I make the crack chicken in the slow cooker, but you could use precooked shredded chicken and just mix the ingredients together before loading up your potatoes.
Make the crack chicken filling: Add the raw chicken, ranch mix and cream cheese to a 4-5 quart slow cooker. Cook for 2-3 hours, then shred the chicken in the pot and stir in shredded cheddar and crumbled bacon.
Stuff the baked potatoes: Once the filling is ready and the potatoes are fully cooked, split the baked potatoes open and season with salt and pepper. Use a fork to gently fluff the flesh, then stuff as much chicken as you can inside. Add more cheese on top and a few bacon crumbles, then broil for several minutes or until the cheese is melted.
Freezing: Baked potatoes will keep in the freezer for up to 10 months. Just be sure to wrap them tightly in plastic wrap and then foil and place in a freezer safe container. The crack chicken can also be frozen in a freezer safe container for up to 4 months. Always thaw in the refrigerator, then reheat in the microwave or oven. Do not freeze stuffed baked potatoes fully loaded.

I put this on this morning with 2 chicken breasts, Carlotta and sweet potatoes. I only had one can of cream of chicken so I used a little extra milk and a little chicken broth. Will this still be ok or should I add something more?
Man i found this on another site, there were not directions, so i just added the chicken, then potatoes , then canned soup and ranch .. hope it isnt mess up. May try to stir it later once the chicken has thawed some .
The only thing I may do next time, is add more ranch. I think the cream of chicken soup taste took over the ranch. Other than that, this is a DELICIOUS meal that I will pass on, and definitely make again!
This was very good. Doubled the recipe and used cream of mushroom soup. I used your recipe for the ranch dressing. I also used frozen chicken. Mine was not watery at all. I would definitely make again.
I made this today but I had to use one can of cream of chicken and one can of cream of potato and it was DELICIOUS!! Next time I will make this with turkey breast and serve it over stuffing bc it is like Thanksgiving in a bowl 2b1af7f3a8
